The delicate flavor of chives seems to go with everything. They are my personal favorite but trying to keep fresh chives on hand is a daunting task. They do not keep well and though are not expensive, I feel as though I waste most of what I purchase. Therefore I always keep dried chives on hand in the kitchen. They are not the same as fresh, but for the convenience and cost they are an excellent substitute! Closely related to the onion, chives provide an easy and colorful way to add a light onion touch to a large variety of dishes.
Fun Fact: Because chives aren’t actually an onion these are FODMAP and AIP friendly! An excellent way to add light onion flavor when you are on a specialized eating plan.
If you need to convert your recipe from fresh chives to dried chives use – 1 tablespoon fresh equals 1 teaspoon dried. If your recipe calls for fresh chive blades instead of tablespoons or teaspoons of chopped chives, use the ratio of 10 chive blades equals approximately 1 teaspoon of freeze-dried chives
